Company Overview: For 25 years, Hissho Sushi has been elevating the sushi experience – making premium sushi accessible and approachable to all. Hissho operates sushi bars in upscale supermarkets, cafes, hospitals, universities and corporate foodservice locations. Our sushi is both delicious and innovative, while offering consumers many healthy options. The Position: The Corporate Sushi Chef will work closely with the Director of Product Innovation & Development. This person plays a key role in project initiatives, including the creation and refinement of menus and recipes, ingredient testing, and documentation. Lead workshops, brainstorming sessions, and cuttings with the Culinary Team, demonstrating flexibility and adaptability to meet evolving business needs and priorities. This role requires occasional travel commitment to ensure operational support, with the remaining time dedicated to aiding the Culinary Team. The Ideal Candidate: The ideal candidate will have a strong background in sushi and hot food preparation, particularly within Asian cuisine. They will possess excellent food presentation skills and a keen attention to detail. Additionally, candidates should demonstrate openness to feedback from all departments and exhibit strong collaborative skills, enabling effective communication across multiple teams to achieve shared objectives. Key Responsibilities: · Development: Collaborate with the Director of Product Innovation and Development to support R&D projects, including menu & recipe developments, ingredient testing, and documenting. · Leadership: Lead culinary innovation workshops and brainstorming sessions with the Culinary Team. Demonstrate flexibility and adaptability to accommodate evolving business needs and priorities. · Product Presentations: Conduct product presentations with internal teams and retail partners. · Standardization: Develop and assist in maintaining standardized recipes and cooking procedures. · Implementation: Assist in developing training materials, manuals, and implementation plans. · Research & Industry Monitoring: Research new culinary trends to incorporate innovative ideas into our offerings. Stay updated on industry trends, market demands, and competitor offerings to contribute insights and recommendations for continuous improvement. · Operational Assistance: Travel to franchise locations as needed to provide hands-on training, support, and ensuring consistency and excellence in food quality and presentation. · Photoshoots: Collaborate with Marketing to capture product images for national promotions. · Representation: Participate in meetings and events to represent the Operational Innovation Department and at tradeshows. Actively engage with external partners during RFP meetings and client discussions. · Feedback Integration: Gather and incorporate client and partner feedback on culinary offerings, adapting recipes and presentation methods to meet diverse consumer preferences. · Compliance: Adhere to company standards, policies, and procedures, ensuring compliance with food safety regulations and brand guidelines. · HQ Training: Assist the Training Team in the kitchen/classroom when needed. Requirements: · 5 years of experience in sushi and hot food preparation, with a focus on Asian cuisine. · College/Culinary degree preferred. · Excellent communication and interpersonal skills, with the ability to work effectively with diverse teams and personalities. · Proven experience in public speaking to ensure confidence in presenting products at client meetings and internal tastings. · Comfortable with data analysis with the ability to use data to inform menu developments and culinary innovation. · Proven ability to manage multiple projects and priorities simultaneously, while maintaining attention to detail and accuracy. · Must be a self-managed person that can work on a variety of projects with a diverse team with minimal direction or oversight. · Proficient in using Outlook email and other basic computer applications; familiarity with Excel is advantageous. · A willingness to travel and work flexible hours, including evenings and some weekends. · A positive attitude, resilience, and a willingness to embrace change in a fast-paced and dynamic environment. · Proficiency in another language relevant to the culinary team may help in various communications. · Ability to lift 50lb and stand for prolonged periods. · SERV Safe Certified.
