I am looking for a Pastry Sous Chef for a brand-new restaurant in the heart of London, an homage to iconic British culture and timeless elegance. From classic favourites to innovative creations, the restaurant aim to craft a menu that celebrates the essence of British cuisine, with a focus on quality, sustainability, and artistry.
Pastry Sous Chef role:As the Pastry Sous Chef , you will be pivotal in bringing the dessert vision to life. Youll work closely with the Head Pastry Chef to curate a unique dessert menu that resonates with the restaurants British ethos. The ideal candidate is passionate about pastry arts, with an eye for detail and a talent for turning British classics into memorable, modern treats. This is a fantastic opportunity for a pastry professional who is excited by the idea of innovation, inspired by tradition, and ready to make their mark on the London culinary scene.
Pastry Sous Chef responsibilities:
  • Collaborate with the Head Pastry Chef to develop and execute a menu that celebrates British flavours, techniques, and ingredients.
  • Assist in training and mentoring the pastry team to uphold the highest standards of quality, consistency, and creativity.
  • Lead the preparation and presentation of desserts and pastries during service, ensuring an impeccable guest experience.
  • Maintain inventory, monitor waste, and manage the ordering of pastry ingredients with a focus on local and sustainable sourcing.
  • Ensure full compliance with health, safety, and hygiene standards in the pastry section.
  • Contribute ideas and inspiration to our seasonal menu updates, keeping our offerings fresh and exciting.

Pastry Sous Chef requirements
  • Previous experience as a Pastry Sous Chef or Pastry Chef de Partie in a high-end restaurant.
  • Strong understanding of traditional British desserts with a flair for innovation and presentation.
  • Exceptional organisational skills and ability to manage a pastry kitchen within a fast-paced environment.
  • A keen eye for detail and commitment to creating desserts that are visually stunning and delicious.
  • Passionate about local and seasonal produce, sustainability, and delivering quality in every dish.
  • Effective communicator with leadership skills to inspire and guide a small, dedicated team.
